Whiskey Acres is a craft distillery in Illinois that produces bourbon using a "seed to spirit" approach, where they grow all the corn, wheat, rye, and barley used in their spirits. They selected three specific varieties of yellow dent corn for their bottled in bond bourbon, which won double gold at the San Francisco Spirits Competition. Whiskey Acres is unique in that they distill single, heirloom grain spirits and use a proprietary blend of corn to showcase the high-quality grains they grow. This sets them apart from other bourbon producers who typically use commodity corn and cannot track the identity of the genetics of the corn used. The full article can be found on Forbes.
