Sweetens Cove Announces Kennessee

Sweetens Cove Kennessee is a blend of Kentucky and Tennessee bourbons finished with toasted maple sugar wood (image via Sweetens Cove)

"Did we just become friends?" one of the ads for Kennessee asks. The product is a mixture of Tennessee and Kentucky bourbon finished with toasted sugar maple wood.

Kennessee is a new product in the Sweetens Cove line and it hit Indiana shelves Friday. It is also being sold in Kentucky and Georgia, just in time for the Masters.

According to blender Marianne Eaves, Kentucky's first female master distiller, the magic behind the new whiskey is the curating and blending of Kentucky and Tennessee bourbons and the finishing of this blend with toasted sugar maple wood. More specifically, she created a base blend of select whiskeys, finishing them in a stainless steel tank with the addition of special wood spirals made from the sugar maple wood before final filtration, proofing and bottling.

“The use of toasted sugar maple to me is like a Kentuckian’s take on Tennessee’s Lincoln county process, adding flavors (mostly sweet and nutty) through the intentional deep toast instead of the way charcoal removes flavors and ‘mellows’ the whiskey,” Eaves said to us. “We make it bolder.”

Sweetens Cove Kennessee, bottled at 55.35% ABV, released April 1, 2022, for a price point of around $60 per 750 ml bottle. It is initially available in Georgia, Indiana and Kentucky, with plans to expand further across the U.S. in 2022.

Penelope Bourbon Introduces Architect Series

The fast-emerging craft whiskey brand Penelope Bourbon has announced its latest offering, the Architect Series.

Named in honor of the art of whiskey blending, this new release combines the brand’s signature four-grain mash bill with two styles of French oak staves.

Working in collaboration with Tonnellerie Radoux of France, a market leader in oak barrel manufacturing, Penelope Bourbon selected each stave using its “OakScan” process.

OakScan is a rapid analysis, stave by stave, based on Near Infrared Spectrometry, the company says. Each stave entering into production is scanned and marked with a letter. This letter indicates which category of tannic potential it belongs to. This is meant to help coopers sort the staves more easily and make barrels with specific polyphenolic indexes. This index estimates the polyphenolic content of wood between 0 and 100.

On the nose of this new whiskey is sweet candied cream and floral notes with hints of green apple, the company says, leading into sweet vanilla and viscous cream with savory oak. The body contains a creamy sweetness with herbal and floral flavors, before a finish of leather and heat, with floral and botanical lingering notes.

Aged 4 to 5 years, this Penelope Bourbon Architect Series is 104 proof. The suggested retail price is $60 per 750-ml. bottle.

Stave & Thief Society Expands Bourbon Certification Program Online

Stave & Thief Society, the Louisville, Kentucky-based Bourbon certification program, has officially launched an online version of its flagship Executive Bourbon Steward training. The new offering expands the reach of their tier-two certification, which had previously only been available through in-person classes taught at Moonshine University in Louisville.

“When we made the decision to take our Executive training online, we did take pandemic-related challenges into consideration; however, the truth is, we have been thinking about offering a virtual experience for much longer,” said Colin Blake, Moonshine University’s Director of Spirits Education. “While COVID-19 certainly quickened the pace of this release, our mission has always been to make Bourbon education as accessible and inclusive as possible – and virtual learning is another way we can deliver on that promise.”

Stave & Thief Society offers two levels of Bourbon Certification, each of which serves as an extension of this curated expertise. The first, Certified Bourbon Steward, can be achieved by independent study of the Society’s Bourbon Steward Handbook and requires passing an online test. The second is the Executive Bourbon Steward title, which can now either be achieved through on-demand virtual learning or participation in a hands-on, daylong class where students utilize Moonshine University’s state-of-the-art classroom, distillery, sensory library and beverage laboratory.

Since its launch, Stave & Thief Society has certified over 4,500 Bourbon Stewards from around the world – from restaurant and bar staff to hotel personnel, distillery tour directors, wine sommeliers, and whiskey enthusiasts alike.

[PRESS RELEASE] Basil Hayden Announces One-time Release: Basil Hayden Subtle Smoke

DISCOVER A SOFTER SIDE TO SMOKY SPIRITS WITH LATEST RELEASE FROM BASIL HAYDEN® - SUBTLE SMOKE

An innovative, one-time release with notes of soft char and light butterscotch

CLERMONT, KY, March 31, 2022 /PRNewswire/ -- Basil Hayden challenges the notion that smoky spirits are harsh with its newest ultra-premium bourbon and limited time offering, Basil Hayden® Subtle Smoke. Artfully complex, yet uniquely approachable, Basil Hayden Subtle Smoke is an entirely new take on smoky spirits that will capture the attention of the whiskey connoisseurs and those new to the category.

Basil Hayden Subtle Smoke
Basil Hayden Subtle Smoke is crafted differently from most other smoky spirits. The steps to create this unique bourbon begin with toasting and lightly charring a secondary barrel. Afterwards, hickory-smoked chips are delicately ignited at a constant feed to produce smoke, which is then pumped into the barrel, resulting in soft, charred notes. This six-month secondary aging process provides a smoother, more subtle take on smoky spirits, and creates the perfectly sophisticated, yet approachable introduction to both bourbon and Basil Hayden.

"We continue to honor my grandfather Booker Noe's legacy of pushing the boundaries of what bourbon can be with the debut of Basil Hayden Subtle Smoke," said eighth generation Beam family distiller, Freddie Noe. "A showcase of the many ways in which our bourbon can be layered, refined and complex, yet approachable and inviting, Basil Hayden Subtle Smoke is re-imagining how smoky spirits can taste."

On the nose, aromas of mellow smoke character with a hint of vanilla preface flavors of soft char with light sweetness reminiscent of butterscotch and maple on the palette. Concluding with a crisp, yet delicate finish of smokiness with light toasted hickory wood, the new expression offers a subtle, welcoming introduction to a smoky spirit while paying homage to the bourbon's signature high-rye style.

"Basil Hayden Subtle Smoke is proof that bourbon can be complex and smoky, but doesn't need to be harsh," said Jonathan Marks, Senior Brand Director for Global Small Batch Bourbon at Beam Suntory. "We look forward to bringing new members into the Basil Hayden family with this bourbon that provides a subtle invitation to smoky spirits in a way that only Basil Hayden can."

Perfect for gifting spirits connoisseurs or wow-ing friends at a dinner party, Basil Hayden Subtle Smoke is available now, for a limited time, at premium spirits retailers across the United States and with a suggested retail price of $49.99/750mL. Ideally served neat or on the rocks, Basil Hayden Subtle Smoke encourages those new and familiar with the category to discover all that bourbon can be through the subtle, unexpected infusion of smoke.

About Basil Hayden®
Crafted in 1992 by Booker Noe as part of the Small Batch collection, Basil Hayden introduced a more subtle side of bourbon compared to its counterparts. Inspired by bourbons with high-rye mash bills, Booker set out to create a bourbon that would offer an approachable taste profile and defy preconceived bourbon perceptions.  Basil Hayden Bourbon welcomes new drinkers into whiskey and showcases new occasions to drink it. Beyond its flagship Basil Hayden Bourbon, the brand has pushed the boundaries of innovation in recent years. These intriguing offerings have included expressions such as Basil Hayden Toast, Dark Rye, 10-Year, and the new, limited time release of Basil Hayden Subtle Smoke.

[PRESS RELEASE] The Launch of Yellowstone Family Recipe

Limestone Branch Distillery Master Distiller Stephen Beam rekindles family distilling history with the launch of Yellowstone Family Recipe

Latest offering inspired by the original Yellowstone recipe and distilled using cloned yeast from Minor Case Beam’s own yeast jug.

ST. LOUIS (March 31, 2022)Limestone Branch Distillery is launching Yellowstone Family Recipe, a craft-distilled bourbon honoring 150 years of Beam- and Dant-family distilling traditions. The new bourbon, created by Limestone Branch Distillery Master Distiller Stephen Beam, will be available at retail in three allocations throughout 2022 – April, August and fourth quarter – with a limited total production of 6,000 cases. Bottled at 100 proof (50% ABV), Yellowstone Family Recipe will have a suggested retail price of $69.99.

With plans to be offered annually, Yellowstone Family Recipe provides a perfect complement to the Yellowstone brand family, which includes Yellowstone Select and Yellowstone Limited Edition bourbons. Consumers of Yellowstone Family Recipe can expect a nose of toasted caramel, candied nuts, tobacco and oak; a bold Kentucky straight bourbon flavor that includes citrus, toasted oak and hints of marzipan and spice; and a medium, nutty finish.

Inspired by a recipe found in notes from Beam’s grandfather, Guy Beam, and containing cloned yeast using DNA from a yeast jug belonging to Beam’s great-grandfather, Minor Case Beam, Yellowstone Family Recipe reflects the original Yellowstone Bourbon mash bill and carries its original namesake’s six-year age statement. It is this recipe that Stephen Beam has been distilling at Limestone Branch Distillery since 2015 and is now ready to share with the world.

“Even before opening the doors at Limestone Branch Distillery, I dreamed about producing a bourbon that was faithful to old family recipes and maintained my family’s heritage and tradition of distilling,” said Beam. “Yellowstone Family Recipe Bourbon is the culmination of decades of dreaming and more than 10 years of effort at the distillery. I believe bourbon lovers will enjoy drinking Yellowstone Family Recipe as much as I enjoyed recreating it!”

A pre-launch of Yellowstone Family Recipe will take place beginning in April at retail locations in Montana and Wyoming – with availability at Lebanon, Kentucky’s Limestone Branch Distillery and retail locations in the state of Kentucky following shortly thereafter – to honor the 150th anniversary of Yellowstone National Park. A limited allocation of Yellowstone Family Recipe will be available across the US in August, with the remaining allocation rolling out in the fourth quarter of 2022.
